A wee bit of the Irish for you!!  This is a quick and easy bread to go with any dinner! Raisins and currants are always optional depending on whether you want a sweeter or more savory soda bread!

Bowl #1 All of your Dry ingredients
– 4 cups white flour
– 2 cups whole wheat flour
– 2 cups rolled oats
– 1 cup buckwheat flour
– 1 cup oat bran
– 2 Tbsp. baking powder
– 3 tsp. salt
– 2 tsp. baking soda
– 1 1/2 c. raisin (optional)
– 1/2 c. currants (optional)
– 6 tbsp. caraway seeds
– 2 sticks butter

Bowl #2 All of your Wet ingredients

– 1 cup maple syrup
– 1/2 c. dark corn syrup
– 1/2 c. honey
– 4 c. buttermilk
– 2 eggs
– 1/2 c. sunflower seeds

Prep and Baking Directions

In Bowl # 1, slice up butter and blend all the ingredients with your hands until it’s like sand and pebbles.

In Bowl #2, whisk all the ingredients together.  Then combine both bowls of ingredients.

Preheat the oven to 350° F.
Irish Soda Bread is best prepared in a cast iron skillet.  Place the skillet (or alternate pan if you don’t have an iron skillet) in the oven with about 2-3 tablespoons of butter in it (2 or 3 min) to get it hot…. take it out of the oven and fill your pan with your soda bread batter.  Return to the oven and  Bake at 350° F for approximately 1 hr. 15 min.
